The Origins

“In studio, in mensa, Bononia docet”

The official act was signed on October 24, 1965, 

when the first Confraternita del Tortellino 

(Brotherhood of the Tortellino) was founded before 

the notary Dr. Gallerani in Bologna. 

The decision to establish a brotherhood of gastronomes arose from a lively debate in the local press during the 1960s, where some questioned the authenticity of Bologna’s most celebrated dish and even contested its origins—claims that Modena sought to dispute.

Unwilling to let Bologna’s culinary heritage be challenged, a group of distinguished food connoisseurs, led by Giovanni Poggi, came together to create the Confraternita, adopting the motto:
"In studio, in mensa, Bononia docet"

 (In study and at the table, Bologna teaches).

New York Delegation

The Confraternita del Tortellino expanded its reach in November 2024 with the founding of the New York Delegation. This new chapter was established to both preserve and share Bolognese cuisine and culture in the United States, fostering appreciation for its time-honored recipes and ensuring that the iconic tortellino continues to be celebrated beyond Italy’s borders.
